Ari Takanashi / Food Stylist and Photographer
Plant-based foods are often perceived as “unknown foods,” but just as shojin ryori (Buddhist vegetarian cuisine) does not use meat or fish, they are rooted in ingredients that have been enjoyed for centuries and are familiar to Japanese people.
Based on this edition’s theme, “Spice Up × SDGs,” and with the hope that you’ll experience new discoveries, excitement, and health benefits, we’ve developed a menu that incorporates Japanese superfoods—such as fermented foods (miso, amazake, and soy milk yogurt)—as well as highly nutritious ingredients like glutinous barley, brown rice, konjac, and goji berries.
Please enjoy these plant-based combinations, created by blending traditional Japanese ingredients with the latest technology.
